CRM 2011 - Workflow/email query

Hello,

I was wondering if anyone could give me some guidance on how to customise my below scenario:

running CRM 2011 on premise, we have a mailbox which receives emails everyday which contains information which ideally I would like a workflow to update the status in each of our accounts. For example, receiving an acknowledgement email would then update the "account status" field in the form based on the information in the subject line (subject: acknowledgement - workflow then recognises this and updates the status in the form).

Any assistance would be greatly appreciated.
