This sounds like a daft question, but . . . . . The credit limit against the customer record in AX, is this in the default currency of the customer or the default (MST) company currency? The reason I ask is that when calculating the available credit it looks kind of confusing, which led me to question what the starting credit limit value / currency should be?

In the currency of the company, not the customer. Put on a new customer in a foeign currency and a credit limit of 100. Then raise an order in foreign currency that triggers the infolog, you will see the credit limit expressed in foreign currency and company currency, and the company currency is the one you defined.
